Don't follow recipes - be inspired

If you are trying to improve your diet then you may be disappointed when you find a nice recipe but it has lots of white sugar and flour and doesn't seem very healthy. You don't need to follow a recipe to the letter, adapt it using healthier ingredients.

For example - doughnuts - not the most healthy food- but you can make doughnuts that can be eaten as part of a healthy diet with just a few ingredient swaps. (I had just acquired a doughnut baking tin so was looking for ideas on what to make)

Original Recipe
75g white flour -  replace with wholegrain, spelt, buckwheat, whatever you like. I chose a gluten free flour mix
1 tsp baking powder
1/2 tsp salt - can give this a miss if you like
55g golden castor sugar - I used 25g xylitol (a natural sweetener) and 20g coconut sugar (55g seemed a lot)
1 egg - use an organic egg
10g melted butter - I used coconut oil
vanilla essence

Instead of sugar icing, I improvised with a desert spoon of cashew nut butter and added raw cacao powder and maple syrup to get a good taste and consistency

I made small doughnuts (150C for 8-10 minutes) and sandwiched them together with the chocolate mix

Another Recipe I tried was 1/4 of my banana and prune cake recipe. This worked even better

60g spelt flour
1/4 tsp bicarbonate of soda
1/2 tsp cinnamon
1 banana
40g prunes
11/2 tbs water
splash coconut milk

Put the dry ingredients in a large bowl
In a mini blender whizz the prunes and water
Add the prune mix to the mashed bananas
Add wet ingredients to dry and mix
Add a splash of coconut milk


Cook at 160C for 10-15 mins
When cool drizzle with 70% dark chocolate melted with a little bit of coconut oil
